1. A beef rib roast (also known as a standing rib roast)
2. Salt and pepper/ Northwoods Seasoning
3. Garlic (optional)
4. A roasting pan
5. Kitchen twine (optional)

1. Preheat your oven to 500°F (260°C).
2. Remove the prime rib roast from the refrigerator and let it sit at room temperature for about 1 hour. This will help the roast cook more evenly.
3. Pat the roast dry with paper towels and season it generously with Northwoods Seasoning or salt and pepper (and minced garlic, if using).
4. Place the roast in a roasting pan with the fat side up. If the roast has a thick layer of fat on one side, you can score it in a diamond pattern to help render the fat during cooking.
5. Roast the prime rib in the preheated oven for 15 minutes. Then, reduce the oven temperature to 325°F (163°C) and continue roasting until the roast's internal temperature reaches your desired level of doneness. • Medium-rare: 14-15 minutes per pound (130-140°F internal temperature)
• Medium: 16-17 minutes per pound (140-150°F internal temperature)
• Well-done: 18-20 minutes per pound (160°F internal temperature)

1. To test the roast's doneness, insert a meat thermometer into the thickest part of the roast, keeping it away from the bone.
2. When the roast is done, please remove it from the oven and let it rest for at least 20 minutes before slicing. This will allow the juices to redistribute and make the roast easier to slice.
